Afternoon Tea fundraiser and Breast Cancer Now employee Dawn, shares her scrumptious sharing orange scone recipe with us.
Ingredients:
Scone:
- 280g Plain Flour
- 2 teaspoon baking powder
- ½ teaspoon salt
- 75g butter
- 100g raisins or cranberries
- 1 tablespoon orange zest
- 2 eggs
- 1 teaspoon orange oil
- 150ml sour cream
Orange honey butter:
- 115g soft butter
- 85g honey
- 1 tablespoon frozen orange juice
Method:
- Preheat oven 190°C
- Sift dry ingredients together and combine butter until like a crumble mixture. Add zest and fruit
- In separate bowl, combine wet ingredients, then add to the crumble mixture. Mix with a fork until all the flour is absorbed but don’t overmix
- Divide into 2 equal round shaped portions and place on a greased cookie tray. With a fork, pat into a round shape approximately ½ inch thick. Using a wet knife, score into 4 or 6 pieces but don’t cut through to bottom
- Bake for 20 to 25 mins (they’re done when they sound hollow on the bottom)
- To make the orange honey butter, use a hand blender to mix the ingredients until well blended
Combinations: Try raisins and ½ teaspoon cinnamon or blueberries and 1 teaspoon lemon extract
