Ashleigh Mogford’s minted lamb kebabs

Ashleigh Mogford, known online as Cardiff mum, shares her air fryer minted lamb kebabs recipe with us.

Mint lamb kebabs

These fragrant, minty kebabs are a treat for the whole family and are fun to make and eat with the kids. The air fryer makes them so juicy and crisp, and they can be prepared, cooked and probably eaten all in no time!

Ingredients:  

For the kebabs:

  • 500g lamb mince 
  • 1 lemon 
  • 3 garlic cloves 
  • ½ teaspoon ginger purée 
  • A pinch of chilli flakes 
  • ½ teaspoon ground cumin 
  • 1 tablespoon mint sauce 
  • Salt and pepper 
  • ½ teaspoon garam masala 

For the cucumber yoghurt salad: 

  • ½ a cucumber 1 clove of garlic 
  • 3 tablespoons Greek yoghurt 
  • Juice of ½ a lemon 

To serve:

  • 2 large tomatoes, chopped 
  • 1 small red onion, sliced 
  • 4 pitta breads 

Method:

  1. Put the lamb mince and the juice of half the lemon into a bowl 
  2. Grate the garlic and place in a blender with the ginger purée, chilli flakes, cumin, mint sauce and the juice of the second lemon half. Season with salt and pepper and blitz into a paste. If you don’t have a blender, chop everything really finely 
  3. Add the paste to the lamb, sprinkle with the garam masala, and mix with your hands. Wet your hands and mould the lamb mixture into 12 sausage shapes. You can stick them on pre-soaked wooden skewers if you like
  4. Place the sausage shapes in the air fryer, drizzle with oil and cook for 12 minutes at 200°C 
  5. Meanwhile, make the cucumber yoghurt salad. Chop the cucumber, finely chop the garlic and mix them in a bowl with the yoghurt and lemon juice 
  6. Chop some tomatoes and red onions, then warm your pittas in the toaster and serve so people can load them themselves
